I found this recipe on the internet a few years ago, have tweaked it a bit and I bake it often. It is quick, easy and tasty:)) My hubby and kids love it as much as what I do!
You’ll need the following ingredients for a standard size round cake:
(I double the recipe quantities below to make a decent size tray cake)
—Prepare your baking dish by lining it with baking paper or a thin layer of oil and a thin layer of flour over the oil. This will make it easier to turn the baked cake out of the dish after it has cooled thoroughly.
—1 Cup of white sugar ( or replace the white sugar with a little less than 1 cup of brown sugar )
—Half a cup of butter ( half a cup of coconut oil works just as well )
—2 Eggs ( free range, if you like )
—1 or more teaspoons vanilla essence
—1 and half a cup of cake flour ( or even better; stone ground cake wheat flour )
—1 and a three quarter teaspoon of baking powder
—half a cup of milk
—a pinch or two of salt
Preheat your oven to 175 degrees Celsius:
In a *large enough bowl; cream together the sugar and butter or coconut oil, beat in the eggs one at a time. Then stir in the vanilla essence.
To save time; sift the flour, baking powder and salt directly over the creamed mixture in the *large enough bowl.. and mix it together well.
Add the milk to the cake batter mixture and stir until smooth.
Pour the batter into the baking dish and bake for 30 to 40 minutes on the middle rack of the oven. Test that the cake is ready to come out of the oven by inserting a thin metal or wooden skewer into the cake, if the skewer comes out clean, the cake can be removed from the oven. Once the cake has cooled well, decorate it with your favourite cake toppings and enjoy!:))
I often leave the cake plain without extra decoration.
Here my kids added yummy, tinned caramel and sprinkles decoration to their cake slices.
